Born out of eco-anxiety and a refusal to add more single-use waste to the world, Lark treats single-use as a design flaw, building a fully closed-loop beverage service instead: bottles are dropped, picked up, sterilised and refilled, milkman-style.

The water itself is no-compromise. It travels from the spring in a stainless steel tanker, is stored in stainless steel, and goes straight into glass bottles — never touching plastic, so no microplastics. Bottles and crates are sterilised at 180°F/82°C using Bioxy Enviro, the first eco-safe broad-spectrum bactericide, virucide and fungicide. Florals are brewed on demand and ginger ale is made to order, so there's no waste from expiry.

Beyond the still spring water, the range includes sparkling (BUBBAS), Very Cherry sparkling, Bluebelle vine & herb, and sparkling ginger. Over 80% of their equipment is reclaimed or refurbished, deliveries run on the efficient Mercedes Metris, and they don't even charge a deposit — because 97% of packs come back. Jill brings decades in the project of human vitality — degrees in divinity, social work and law, time as a bakery-cafe co-owner, work as a practicing psychotherapist, and a love of West African dance and drumming — all rooted in the converted barn she grew up in and returned to raise her own family. Anne combines Illinois roots, an Oregon education and a Massachusetts-built life, with a 20-year career in book publishing that she paused after facing cancer treatment, to focus on what mattered most.
